Ingredients
- 500 grams Klein Karoo Ostrich Viennas (9 / 10 per pack)
- 8 Small Pancakes
- 4 Poached Eggs
- 200 grams chopped fresh spinach
- 2 leeks (or small red onions), chopped
- 10 mL olive oil
- 10 mL butter
- 30 mL flour
- 2 cup(s) low-fat milk
- 3 mL salt and pepper
- 30 mL Parmesan cheese
Directions
Method:
- Heat a dash of oil in a pan and fry the viennas or heat briefly in water.
Low-Fat Creamed Spinach:
Please note: These quantities will vary accordingly if you adjust the number of people to be served in the ingredients section above.
- 200g chopped fresh spinach
- 2 leeks (or small red onions), chopped
- 10ml olive oil
- 10ml butter
- 30ml flour
- 2 cups low-fat milk
- salt and pepper
- 30ml Parmesan cheese
Method:
- Fry the leeks in olive oil and butter for 3 minutes.
- Sprinkle flour over the leeks and stir for one minute.
- Add the milk slowly, whisking all the while to dissolve the flour in the liquid and eliminate any lumps.
- Bring milk mixture to a simmer, add the spinach and cheese, and season with salt and pepper.
- Cook covered over a low heat for 15 minutes.
Low-Fat Hollandaise Sauce
Ingredients:
- 1 egg
- 1 cup low-fat buttermilk
- 15ml melted butter (optional)
- 15ml lemon juice
- 15ml cornstarch
- 1ml red pepper flakes to taste
- salt to taste
Method:
- Whisk all the ingredients except salt in a saucepan until smooth.
- Simmer over a low heat for 8 minutes, keep stirring to avoid lumps.
- Add salt to taste.
- Serve immediately.
